Tenerina is a salted seasoned ricotta, once it is removed from the mould it is seasoned with fine salt. The seasoning takes place in fresh airy rooms for a period of 10 days. This ricotta has an aromatic savoury flavour and is ideal in small cubes for salads and as a snack.
It has a moderate calorific content and is low in lactose as most of the lactose is trapped during the curdling in the preparation process.
