Using 100% goat’s milk, maintaining old traditions and flavour, AMALATTEA produces high quality “ricotta”.

Homogenized fresh ricotta is a soft creamy product obtained by  sieroproteins’ flocculation through heat.  After extraction following the traditional method, the ricotta is homogenized and smoothed to ensure its texture is soft and spreadable and has a delicate sweet flavour.

The homogenized goat’s “ricotta” Capriola is excellent for adding flavour to dishes or as a stuffing. Its low lactose level and low fat content (mainly short chain so easy to digest) make this product particularly suitable for people intolerant to cow’s milk.
